Back in March of 2018 we brewed a batch of Soma Stout. Soma Stout is brewed similar to a Foreign Extra Stout but includes a substantial amount of Flaked Oats alongside base malts of German Vienna and Munich to provide a smooth, fuller body. We used various Crystal and Roasted malts from England to lend flavors of bakers chocolate and dark fruit without notes of bitter coffee.

We have a few versions of Soma Stout aged in a variety of barrels. This version was double barrel aged, and started life in French oak Cabernet barrels from a winery in California. After nearly 5 months in Cabernet barrels, we found a barrel broker that had some unique whiskey barrels that we couldn’t pass up. These rare French oak barrels first held French Shiraz before finishing some High West Bourbon that was previously in heavy char American oak barrels. These barrels have intense notes of fortified red wine and bourbon with a backdrop of French oak spice and heavy tannins. These barrels are toasted, not charred, so they don’t lend notes of vanillin or butterscotch typified by Bourbon barrels. These are some of our most coveted barrels in our collection.

Over 2 years in barrels has treated this beer wonderfully. Dark fruit, caramel, and delicate chocolate are intertwined with notes of bourbon and wine. The finish is smooth and medium bodied with restrained acidity. 9.2% ABV

Tomorrow we will be packaging this beauty in 375ml bottles and anticipate a June release.

When most people think of Florida agriculture they think of citrus fruit, but Florida has a lot of other unique fruit as well. We like using local ingredients in our beer, and are sometimes surprised by the interesting flavors we can get from fruit that is typically overlooked. 
_
While Florida is not yet known for the quality of its peaches, we believe that in a few more years the unique and intense flavor of Florida peaches will be acknowledged amongst chefs and foodies alike. Florida peaches are definitely one of our favorite local ingredients, and the use of peaches in wild ales is widespread for good reason. Muscadine grapes however, have carried a stigma of being inferior to traditional wine grapes and viewed as something that should be saved for bootleg operations. Muscadine grapes have thicker skins making them harder to process. They also have considerably more tannins and more acidity than traditional winemaking grapes.

While many of the techniques and processes we use are similar to those employed by winemakers, our mindset is definitely different (and far more experimental) from that of the typical winemaker. While the flavor of these red muscadine grapes is unusual in the world of wine, these overlooked grapes produce unique and vibrant flavors in our beer.

Back in September of 2019 we drove to the small town of Pierson to purchase 320 pounds of red muscadine grapes from Elliot Vineyards. We crushed these grapes and added them to 39 gallons of our Lambic-Inspired wild ale for a 3-month fermentation with the skin, flesh, and seeds of the grapes. At a rate of over 8 pounds of grapes per gallon of beer, this beer is made with the most fruit we can legally add to a beer.

Red muscadine grapes lend notes similar to wild blueberries mixed with ripe watermelon. This beer is intensely fruity with a backdrop of earthy, Brett funk. While muscadine grapes are more sour than typical grapes, the acidity in this beer is tempered by using a base beer that is less sour.

Muscadine Saturation will be released on Saturday, April 4th online and for to-go sales in our taproom. 750ml bottles are $32 each and limited to 4 bottles pp.

To create ELUSIVE WORDS we took our flagship Saison PAST & FUTURE and conditioned it on top of the spent sweet and tart cherries used to create our heavily fruited cherry beer, STABBING ELBOWS. This beer retains its rustic and funky edge while getting a little color and fruity complexity from the spent cherries. 5% ABV Bottled 3/1/2019
