We named this beer after the three microbes responsible for creating our flavor from fermentation: Saccharomyces, Brettanomyces, and Pediococcus.
This strong golden ale was packaged unblended from a single 500L French Oak puncheon that exemplifies what we like best about the flavor from our mixed culture. Aromas of sweet mango and honeydew melon greet the palate and lead to a tropical medley of carambola and passionfruit with a full bodied and tart finish. 9.2%
We took our Strong Golden Wild Ale and dry hopped it on a mountain of whole leaf Mosaic, Azacca, and Citra. Exceptionally aromatic with tropical notes of mango, orange, pineapple, and lychee that lead to a funky finish with plenty of oak tannins and firm acidity. This beer is our version of a Double IPA; instead of making it bitter we used our house mixed culture to keep things sour, aged in barrels for nearly a year, and dry hopped with more than 4.5 pounds of hops per BBL. 9.2%
