This version of our imperial wild ale was barrel aged for a total of two years. First aged in California Sauvignon Blanc barrels, and conditioned on apricots before resting in French Sauternes barrels. Lively aromatics of Sauternes, Sauvignon Blanc grapes, and fresh apricot skins belie the strength of this bold beer. Moderate acidity cuts through the sweetness and lends the perception of a lighter body. Notes of toasted French oak with moderate tannins provide some structure before a clean and lasting finish. Served still.
