This Wild IPA combines Pilsner malt, wheat, and flaked oats with Cascade, Simcoe, Citra, and Mosaic hops in the boil. Open fermented in stainless steel with our house mixed culture, and then aged in neutral French oak puncheons for 16 months. After barrel aging, we dry hopped with whole leaf Cascade, Citra, and Mosaic. Our mixed culture keeps this beer tart, dry, and funky, while American hops contribute plenty of citrus and tropical notes.
