Inspired by one of America’s greatest novelists and the cocktail that shares his name, this beer started as a blend of our golden wild ale with a touch of our Lambic-inspired spontaneous beer. The spontaneous beer included in the blend provides a sense of terroir and an additional layer of yeast complexity, while the golden wild ale delivers our signature funk and refreshing acidity. After blending the two beers we refermented with blue Juniper berries and lemons. Juniper adds resinous notes of herbaceous spice and pine with underlying citrus, while the lemons complement the acidity produced by our mixed culture.
